In the vibrant culinary landscape of the United Arab Emirates, a desire for novel dining experiences is ever-present. This journey of culinary discovery led me to Himitsu, an exclusive Japanese-inspired speakeasy bar, artfully concealed behind Alba, the acclaimed Asian fine-dining establishment that graces the Dubai Opera precinct in Downtown Dubai.

An Intimate and Exclusive Ambiance

Upon entering Himitsu, the sense of exclusivity is immediate. With a capacity of just 15 guests, this 800-square-foot sanctuary is a masterclass in intimate design. The space is meticulously soundproofed, ensuring an uninterrupted experience, and bathed in a rich, alluring palette of reds. Adorned with traditional Japanese art and intricate floral murals, the ambiance whispers of sophistication and artistry.

True to its name, which translates to "secret," Himitsu operates without printed menus. Instead, guests are invited to immerse themselves in a curated experience, where each dish is unveiled progressively, creating an element of delightful anticipation.

The bespoke eight-course omakase menu I had the pleasure of experiencing was masterfully crafted by Sous Chef Henry Kisame Ibra. Having spent seven years in Dubai and the last 18 months honing his skills at Alba, Chef Ibra, originally from Uganda, demonstrated an exceptional ability to create each dish in real-time. His approach is a testament to his deep understanding of ingredient availability, the harmonious flow of flavours, and a keen awareness of the group's preferences. Opting for counter seating proved to be an excellent choice, as it facilitated engaging conversations with the chef, offering insights into his culinary philosophy.

A Symphony of Flavours and Textures

The evening commenced with a delicate and refreshing tosaka seaweed salad. This starter artfully combined the oceanic notes of seaweed with the sweetness of Uzbek tomatoes and the subtle tang of Japanese pickled vegetables, embodying Himitsu’s fusion ethos. This harmonious blend of Asian flavours, subtly underpinned by European and Mediterranean produce, was beautifully complemented by a "Cold Beauty" mocktail, a refreshing concoction of vanilla and pomelo.

The second course was a true revelation: otoro tartare. Utilising the fattiest and most prized cut of bluefin tuna, it was presented atop crispy fried kimnori, accompanied by sushi rice and a delicate wasabi cream. The luxurious, buttery texture of the otoro was perfectly counterbalanced by the satisfying crunch and oceanic salinity of the seaweed. A vibrant strawberry and raspberry mocktail provided a sweet and playful contrast, cleansing the palate for the courses to come.

The tasting journey continued with Wagyu shiso. Thin slices of premium Wagyu beef were layered with a subtle wasabi cream and a rich black pepper sauce. This dish was paired with a citrus-forward lemongrass and grapefruit drink, its zesty notes cutting through the richness of the beef. Following this was the smoked hamachi, a dish elevated by a medley of intriguing accompaniments. Pickled papaya, ancho chilli infused with pineapple, carrots, and capsicum created a complex flavour profile, all brought together by a bright yuzu gel. A pomegranate and galangal beverage echoed the dish's multifaceted nature, offering a refreshing counterpoint.

A sense of comforting warmth arrived with the shiitake mushroom soup. Rich in umami and garnished with spring onions, soy sauce, and mirin, it was a soul-soothing creation. For those seeking an alternative, a delicate clam soup was also offered. Both soups were thoughtfully paired with warm, nutty hojicha, a dry-roasted green tea that added a layer of comforting earthiness.

The undisputed highlight of the evening was the A5 Wagyu rib-eye steak. Cooked to absolute perfection, its presentation was a testament to Japanese culinary precision. Served alongside crisp lettuce and tender baby spinach, and finished with a subtle ancho chilli sauce and dry miso, the dish was an exercise in indulgent restraint. It was an eloquent ode to the Japanese culinary philosophy of respecting and showcasing the inherent quality of premium ingredients.

Sweet Endings and Lasting Impressions

The dessert courses offered a delightful conclusion to the omakase experience. The cappuccino flan was an elegant, coffee-infused finale, crowned with Chantilly meringue and a drizzle of caramel espresso. This sophisticated treat was paired with a vibrant passion fruit, green apple, and almond drink, its tartness and nuttiness providing a refreshing contrast. The final offering was the coconut dango, a wonderfully chewy and comforting confection. These rice flour dumplings, infused with matcha and coconut, were bathed in a luscious sauce of coconut sugar, cream, and butter, leaving a lingering sense of sweet satisfaction.

The Verdict: A Truly Unique Dubai Dining Experience

The Wagyu steak was, without question, the most memorable dish of the evening. It served as the anchor of the omakase menu, powerfully demonstrating the kitchen's profound respect for high-end ingredients. The Wagyu possessed a melt-in-your-mouth texture, with flavours that were thoughtfully layered, allowing the exquisite taste of the meat to linger long after the final bite.

Himitsu stands out as one of Dubai's most singular dining experiences. It is ideally suited for discerning diners who relish the opportunity to surrender control and embrace the element of surprise. Those who prefer the clarity of a traditional menu might find the inherent secrecy a touch challenging. The intimate setting, with its limited seating, further elevates the experience, positioning it as a destination for special occasions rather than a casual, everyday dining spot.

Himitsu is available from Thursday to Sunday, with two seating times offered at 6:00 PM and 8:00 PM. The mixed omakase experience begins at Dh450 for the eight-course menu. Optional beverage pairings are available, with mocktail pairings priced at Dh200 and cocktail pairings at Dh400. The menu is subject to daily changes, ensuring that each visit offers a fresh and novel culinary adventure.
