Raan Jay Fai's Crab Supplier Defends Pricing Amidst Controversy

The supplier of crabmeat to Raan Jay Fai, the Michelin-starred street food restaurant in Bangkok, has publicly defended the establishment and its owner, Jay Fai (Supinya Junsuta), amidst recent pricing controversies. The supplier, Bird Market, emphasized that Jay Fai recognizes and fairly compensates for the high quality of ingredients used in her dishes.

Recent scrutiny arose after a Thai influencer based in London questioned the pricing of a special crab omelette, which was not clearly displayed on the menu. While a standard crab omelette is listed at 1,500 baht, this particular version cost 4,000 baht. This led to a fine of 2,000 baht for Jay Fai for failing to display the price. The Department of Internal Trade is continuing its investigation into whether the restaurant's prices are generally excessive.

Hatsathorn Srisuk, the owner of Bird Market, took to Facebook to address the situation, stating, "I apologize for selling expensive crab to Jay Fai." He explained that the social media attacks on Jay Fai, whom he considers a benefactor, prompted him to speak out in her defense.

The High Cost of Quality Ingredients

Hatsathorn emphasized that the premium cost of the crabmeat reflects the demanding process of procuring high-quality crabs. He detailed the sustainable and labor-intensive methods used to catch the crabs, which contribute to their higher price point.

  • Sustainable Fishing Practices: The crabs are caught by small-scale coastal fishers using floating gillnets, ensuring minimal environmental impact.
  • Daily Fresh Catch: The crabs are harvested fresh daily, without the use of preservatives.
  • Labor-Intensive Processing: A significant quantity of whole crabs is required to yield a small amount of lump crabmeat. According to Hatsathorn, approximately 10 kilograms of whole crabs are needed to produce just 1 kilogram of lump crabmeat. On some days, fishing boats may return with less than 100 kilograms of crabs, resulting in fewer than 10 lumps of crabmeat.

Fair Compensation for Fishermen and Workers

Hatsathorn further elaborated that the prices of crabmeat fluctuate depending on the season and environmental conditions. He affirmed that Jay Fai consistently pays the highest and fairest price, recognizing the hard work and dedication involved in each delivery. This fair compensation extends to the boat crews, crab pickers, quality sorters, and delivery staff, all of whom earn a decent income because of her.

Regarding the failure to display the price of the special crab omelette, Hatsathorn acknowledged that Jay Fai has accepted her mistake and taken corrective action. He expressed his opinion that the ongoing condemnation of Jay Fai is unfair.

He noted that achieving global recognition is a difficult feat for any Thai individual. In closing, Hatsathorn stated, "So if you're going to blame Jay Fai, blame me. I'm the one who sells her expensive crab."
